Curry goat, burned right.

Jamaican curry is its own thing, and the technique that makes it work happens in the first ninety seconds, long before the meat goes anywhere near the pot.

Jamaican curry is not Indian curry

It leans hard on turmeric, which is where the deep yellow comes from, and it carries allspice that no Indian blend would. It is its own spice road, arrived in Jamaica with indentured workers from India and then rebuilt around what grew on the island. Same word, different pot.

The curry gets burned first

The powder goes into hot oil on its own and is fried until it darkens and the kitchen smells of it. Jamaicans call this burning the curry. It cooks the raw edge out of the spice and blooms everything underneath, and it is the single step that separates curry goat that tastes cooked from curry goat that tastes powdered.

Bone-in, and given time

Goat on the bone, seasoned and left to sit, then cooked down slow until it stops resisting the fork. Potato goes in late so it thickens the gravy without turning to paste. Goat is lean and full of sinew, so this is another dish that only time fixes.

The dish that gets ordered for everything

Curry goat is what shows up at weddings, christenings, Sunday dinner and repasts, which is why it is one of the three meats most catering orders are built around. If you are feeding a room and only picking two things, this is usually one of them.

Goat, and it is actually goat

Plenty of places quietly serve lamb and call it curry goat, because lamb is easier to get and more forgiving to cook. Ours is goat. It is leaner, it needs longer, and it carries a deeper flavour that lamb does not. One thing that trips people up: in Jamaica a menu saying curry mutton usually means goat as well, so if you have been ordering mutton at home, this is the dish you were already eating.
