Anything on the menu or on the catering trays can go on the same order as the turkey, so the bird and the sides arrive together and nobody is cooking on the day but the person carving.
A whole bird takes far longer than a plate, and the kitchen still has a counter to run in Thanksgiving week. Closing orders five days out is what lets every turkey be cooked properly for the family that ordered it, and it is the same window the rest of the trade works to.
